Tempering Chocolate: The Crystal Science Behind a Glossy Snap

A well-tempered bar of chocolate snaps cleanly when broken and has a glossy, unmarked surface, while an untempered bar often looks dull, feels slightly crumbly, and may develop a pale, chalky coating called bloom. The difference has nothing to do with the ingredients and everything to do with how the cocoa butter inside the chocolate is allowed to crystallize as it cools. Cocoa butter is polymorphic, meaning its fat molecules can arrange themselves into several distinct crystal structures, each with a different melting point and appearance. If melted chocolate is simply left to cool at room temperature, the fat molecules settle into an unstable mix of crystal forms, some of which melt at low temperatures and produce that dull, soft texture. Tempering solves this by carefully heating and then cooling the chocolate through a specific sequence of temperatures, which encourages only the most stable crystal form to develop while melting away the less stable ones. Once that stable form dominates, the remaining chocolate cools into a tightly packed, uniform structure, which is what produces the clean snap and glossy shine. Chocolatiers traditionally judged this process by feel and temperature alone, working the melted chocolate on a cool marble slab, though the same result can now be achieved with more precise, digitally controlled equipment. Bloom, meanwhile, isn't spoiled chocolate -- it's simply chocolate whose cocoa butter crystals were never properly stabilized in the first place, or that later re-melted and recrystallized incorrectly.
