The deep brown crust on a seared steak, the crackling surface of fresh bread, and the rich aroma of roasted coffee all trace back to the same chemical process, first described in detail by French chemist Louis-Camille Maillard in the early twentieth century. What's now called the Maillard reaction happens when amino acids -- the building blocks of protein -- react with certain sugars under heat, typically somewhere above 140 to 165 degrees Celsius, setting off a cascade of chemical transformations that produce hundreds of new flavor and aroma compounds along with the characteristic brown color. It's often confused with caramelization, a related but distinct process that only involves sugar breaking down under heat, with no protein or amino acids involved -- caramelizing sugar alone can brown and change flavor, but it can never produce the Maillard reaction's specific meaty, toasted, roasted notes, which require protein. The Maillard reaction also proceeds far more readily in dry heat than in moist conditions, and moves faster as acidity drops, which explains a common kitchen experience: food seared in a hot, dry pan develops a deep brown crust quickly, while the same food simmered in liquid stays pale no matter how long it cooks, since surface water keeps the temperature from climbing high enough for the reaction to take hold.
